It's Hatch Chile season here for the next few weekends. Every weekend HEB will be fire roasting those sons of guns out side as you walk into the store. Makes me cry from the heat, but goT damn those chiles fresh are amazing.

Wife and I are going to the Hatch chile festival in a couple of weeks. Can't wait!! We're going to work in some dove hunting as part of the trip.

Colorado chiles are coming in now too. They are great as well, moscos are the hot ones grown in Pueblo.
Farmers market has a great variety of the Colorado chiles here in Laramie.
Big Jim green chile in the pot on the stove today.

Another week or so and they will be thicker flesh and much more flavor with the heat.
Hatch folks always told us early Sept or so was best time for chile harvest.
Bought a bag of Big Jims and they had a little heat.

Hoping to put another bushel and a half in the freezer before summer ends. We have to wait for the farmers market on Fridays . Safeway sells the Hatch chiles up here but not roasted.
