Tried it once a very long time ago. Pretty darn tuff, it was a one and done deal.

I’ve heard you do ewes and kids are good, old wall mount Rams not so much!

I’ve never had it. I would like to try a young one...

I've had a couple. It is tough and strongly flavored, but certainly edible. I really like it in heavily spiced, slow cooked dishes. One favorite is put it in the crockpot all day for enchilada filling. Works really well in curry, too, if you're into that kinda thing. Sausage is good, too. I don't love it in the simple herb garlic sausage recipe I use for pork, but it's really good chorizo, summer sausage, etc.

I like hunting them, so I'll probably eat another one, but it wouldn't be my first choice for a meat hunt. I've never had a young one.

I've only eaten one. It was a big ram I killed in Bandera in 1995. He was tough and did not taste good, at all, but I ate the whole thing because I was poor and didn't want to waste any meat. It wasn't as bad as jack rabbit, but it was bad.

I'd like to shoot a young ewe and try it again. I heard they are pretty good.

When we drew and hunted Palo Duro, my partner killed a young ram and a couple small ewes. We kept the tenders and backstops from the youngest. Still didn't think it was fit to eat, compared to WT and ELK. Like Crocodile Dundee said in the movie "You can live on it, but tastes like sh*t!!"

I have only shot one. Backstraps and tenderloins weren't bad but not as good as deer and elk. Made sausage out of all the rest of it. Doubt if I ever shoot another. Got one for the wall and I don't need another one and I eat what I shoot.

Shoot the ones which are suckling.

I have eaten a lot of the younger ones and ewes along with rams up to 26" horn length. If you cook them like venison the taste and texture are similar on the ones I have killed and eaten. How you clean them and treat them is what changes how they taste. I used rubber gloves and skinned them first, did not let the outside of the hide touch the meat. I then gutted and hung them in walk-in cooler for at least 7 days. I have also had tamales, jerky, smoked the backstraps/tenders whole, dry sausage, snack sticks and ring sausage made from several aoudads. It was all very good. I used to kill them and give them to a fence building crew, they would cook carne guisada out of them or grill them. They really liked to eat them. I had a friend tell me that his brother-in-law would clean the older mature rams they killed in Bandera County. They would kill an old ram then skin it as quick at they could and gut it the same way I did above. With the older rams they made sure to not touch the outside of the hide then touch the meat when cleaning. They gutted the ram then hung them in a walk-in for a few weeks to age the carcass. He told me that it really made a huge difference in the taste and texture of those older rams. He told me that it had a taste similar to beef. I have never tried a really old mature ram done like that since I could not get past the smell of them. My friend said his BIL and his BIL's had done that to all the aoudads they had killed for a very long time. Said it was more work but they swore by the method of cleaning and aging the aoudad.

Agree. I've tried many times and it sucks.

This was my experience as well.
I only shot one and it was a ewe. Tried to fry the backstrap and literally threw it in pasture.
I ground about 10 lbs of it up with 5 lbs of pork and made a few dried sausages and really didn't like it much either.

The Y-O Ranch used to serve aoudad jalapeno poppers at the SCI Handgun Hunters Chapter group hunts.

They were spicy and caused volcanic results (if you know what I mean)!

I think they were marinated in battery acid and gasoline, then flame-grilled.

Ok after reading this I’m pretty sure aoudad is off my list

While I have loved every meat from wild sheep I have eaten, for me, aoudad ranks down at the bottom of the list. Kinda like mountain goat; the flavor is OK, but the bite of meat just gets bigger and bigger, the more you chew!!!

Tastes fine. Rams, ewes, their meat tastes like.....meat.

Get the hide off quickly, get the meat on ice asap, and butcher it. Same goes for pronghorn (which people also claim is awful)

The only experience I have, is with a mature ewe I shot on a draw hunt at Colorado Bend State park.
She was very good eating.
Backstraps and tenders very good grilled.
Good breakfast sausage.
Used ground meat just like I would hamburger meat.

Only ones we tried to eat were old rams. They were escapees from a HF ranch neighbor. After months of trying to catch them we were told we could shoot them. We got 2 big ones, I did a nice euro mount for my brother and dad with them. They didn't seem tuff to me, but had a smell and the taste of the meat wasn't something i cared to eat. We fed them to the buzzards after they had been cleanly killed skinned and gutted in a very timely manner and kept on clean ice. They had no similarity in flavor to beef to any of my family.

Maybe the young ones and ewes are better, Ill probably never find out. I can say that it was a beautiful looking meat.

I've killed five or six rams and I've had them all processed. The hamburger is good and the sausage is very good too. If you are having any steaks cut, I would recommend having them tenderized twice. I bring the jalapeno and cheese sausage to work for our annual bbq and everyone loves it.

I tried to eat an older ram that I shot (30") and it was terrible.
Even the gravy was tough!

Tough gravy?!?!?!?!? I just spit out my coffee!! been bugging my buddy to come through on an audad hunt because he is covered up with them and said he likes them better than whitetail..... this thread got me to seriously questioning his taste.

I personally haven't had aoudad but I would like to try it in the various forms one day. But what I am gathering about the animal is they are like the cheapest beer you can buy. Kind of like back in the younger days or for some how they roll today, they bring the cheapest beer possible because they know no one else is going to touch it. So by you buying such cheap beer you actually begin to really like it. I may be way off on what I am gathering from every single aoudad post, my bad.

It's trash, I used to cape them or cut off the heads and roll them down the canyons. We couldn't even shoot coyotes off them.
