This is my last tenderloin from that huge cow I shot last winter. At 20" long, it is almost the size of a WT backstrap!! Half of it is marinating in Soy, Honey, Garlic, and Red Coloring as Char Siu, to have as sliced Chinese BBQ and seeds. I'll have to think about the other half!!! try some of that as Tartare some time  Last one I had made that from trimming up one and did that for the appetizer before getting to the main course. Turned out very well. That was the only time I made it though.

Nice bull! They sure don't eat as good as spikes and cows tho, so I find myself gravitating to those more and more.
