Made a little pot of seafood gumbo for some good friends this weekend. Shrimp, crawfish, oyster, & crab. A little too much seafood for the pot but oh well lol. Good times were had.

Didn’t take many pictures, but thanks for looking.

Thanks. LOL, they are boiled eggs.

If you like boiled eggs (I do), they are really good in a gumbo. Get you a little piece of egg with some gumbo juice on your spoon, good stuff.

I made gumbo for a long time before I ever heard of dropping some boiled eggs in. A couple Cajun buddies of mine turned me on to it. Some of their Grand Mamma's made egg gumbo's because that's what they had. Just egg.

Cool thing about the eggs if you don't want one, then don't get one. They don't effect the flavor one bit.

Thanks, it got darker before it was finished. First time using avocado oil in a roux, I was nervous about doing something different and feeding folks. Avocado oil has a higher smoke point than peanut oil, and it cooked differently than vegetable oil for sure. End result was good I think (haven't really eaten any of it yet LOL). Very little smoke during the end, way less smoke than veg oil.

I'll be using avocado oil from now on.

I'm a fan of cast iron myself, but this pot is growing on me. I wish I would have bought an original when they were available.

Quick story about this pot - I was working in SE Asia and wanted to make a seafood gumbo for the folks at work. Finding the proper ingredients and cookware was difficult. So, I ordered this pot from the States and had it shipped to Singapore. Covid-19 was not a thing here yet but was in full blast there. I went on leave 2 days before all flights were shut down etc.........so this pot that I paid $200 for plus shipping got shipped from the US to Sing, then was packed up and sent back to the US before I ever opened the box.

It got a little damaged during it's journey to and from, got a little bent/warped. Lid won't seal properly and a bit of an eye sore.

Then I thought, I have something in common with this here pot and I'm gonna keep it. grin Has done me a good job so far.....
