This one is actually pretty good on the calorie count. The cottage cheese makes it a little lower. The girls had seconds, but I managed to only have one piece, 'cause I knew I'd be eating lunch after mowing.

Couple guys asked about baking this. Really simple, a cave man (me) can do it!! If you notice in the picture of the batter, the caveman missed peeling one of the peaches tho!!!
Prep Time. 10 mins Cook Time. 45-50 mins Total Time. 1 hr
Ingredient List:
3 large eggs ½ cup + 1 tablespoon sugar 6 tablespoons melted butter 1 cup small curd cottage cheese 1 cup low-fat greek yogurt (I used my regular vanilla flavored stuff) 1 teaspoon vanilla extract ¾ cup all-purpose flour ½ teaspoon salt 1 ¼ teaspoons baking powder 1 ½ cups sliced peaches fresh or frozen (if you use frozen, thaw out and pat dry)
Instructions:
Preheat the oven to 350°F. Seems to take forever to cook, but will brown quickly at the end Lightly grease an 8" or 9" springform pan
(can also use a regular 9-inch cake pan, make sure to use a parchment cake circle in the bottom of the pan, to prevent sticking.)
Beat together just the eggs and sugar, until smooth. Add the melted butter, cottage cheese, yogurt and vanilla, beating until well combined. Add the flour, salt, and baking powder, stirring or beating gently to combine. Gently fold the peaches into the batter, then pour the batter into the prepared cake pan
Bake the cake for about 50 minutes until a toothpick inserted into the center comes out clean. Remove the cake from the oven and let it rest at room temperature for 30 minutes, to firm up. Sweet Tooth never lets ANYTHING cool!!! Serve warm for breakfast. Makes a good cold dessert too!
