Found a beautifully, fresh-cut, entire eye of round roast today. No plans for dinner yet, so let's rummage around in the cupboard, and see what we find! Looks like beef, gravy, and fancy pasta to me!! Cleaned the minimal fat and tissue off, cut into 1 inch slabs, chunked them up big, and will pressure them to cook to fall apart tender. Hoping they will shred with a fork.

Haha! Nope, haven't opened one in years. I believe in just winging it! I will always eat the left-overs anyway, if no one else will. The wife puts tape on them with "Joel" on it, puts them on the self for my hunting meals, and they never appear again!!!

Was a little torn, as I didn't want to mask the flavor of that special pasta the wife had bought in Havasu, but wanted something similar to Stroganoff. That's why I added the sour cream to mine. The meat was fall-apart tender, and all the juice from beef stock and drippings made a great gravy. Bruschetta from night before was a nice snack. Gonna save each one of the left overs for something different, and compliment the individual flavors separately.
