Double bubble, toil and trouble. In the cooker now. Anything cooked in beer and hearty beef stock, with lots of veggies coated in black pepper is bound to turn out good. Guess we will know in about 6 hours!!

Diid the recommended 6 hours in the crock pot. Came out pretty good (but a little dry), and the veggies were perfect too! Women pointed out that they only do cows, pigs, and chickens - bison was off their list, so they settled for left-over lasagna out of the freezer. OK, more for me.

Sliced up about normal brisket-thickness with my carving knife, and it was really dense, but didn't appear tough. Ate a piece dunked in the liquid, and it was definitely tender enough for sandwiches. Made up a couple cups of homestyle gravy with the juice from the pot, and a package mix. Had that, also some prepared horseradish to eat it like prime rib, and blended up some Hatch Chiles to have on the veggies and with the meat. All three were excellent, but the gravy was by far the best. Had to have seconds, so I could re-judge!!

Made a little better effort to cut perfectly across the grain and see if it made a difference. Not really, and the taste was similar to beef roast, but a little sweeter. All in all, I would definitely eat it any chance I got. Cubed it all up and am thinking of an awesome Stroganoff recipe to use it in next!!! smile
