Great hanging but better on the plate.

How was the grilled King? They have been putting out FAD and Reefing Ships, etc. all along the Coastal bend. Should make for some great fishing.

How was the grilled King? It was good, but not as good as the grilled red snapper! Our Capt said the king was only good grilled the day it was caught or the day after. 🤷 Wish I had fried some just to try it, today is day 3 and I may give it a try anyway.

Do it, your Captain is not accurate. Some people also say you can't freeze mackerel, it get's too soft. I've heard the same thing about speckled trout many times... No it doesn't, but it's always better fresh no doubt.. I have frozen a whole lot of kingfish, and smacks. Always freeze them in water, cut them up into nuggets (like catfish nuggets), and fry till crisp. Make sure the fish is seasoned properly and fry fast in hot oil, it makes a difference. It is a different texture, but it ain't bad especially when you're hungry. I have fed fried kingfish to people that bragged on it and tore it up, but were haters before that. *Tip* adjust the size of the nuggets to your liking. Finicky eaters will prefer smaller nuggets.

Grilling & smoking they are pretty good if fresh. A little oily but Skinnerback has it right on steps and taste. Smoked mullet can also be great if it is from eastern gulf clear waters. We used to see mullet in solid 10 acre schools when they came into bays to spawns. Turn the water black they were so thick. We would snag them with large treble and fill up a boat pretty fast. It was legal then and I don't know if it is still legal? A friends wife make a great seafood dip out of Kings. I don't have the recipe but you can google them to your flavor. (smoked king fish dip recipe). It taste great with cracker, chips, and on potato's. Dip Recipe

I like to gut them and keep them whole, then cut into 1" thick steaks bone in. Season, cold smoke, and vacuum seal. Delicious.

Those mangrove snapper are excellent. We caught a 5 person limit of those back in April. We took Sure Shot II out of Zeke's Marina. This is "Richard". Richard likes to steal fish off your cleaning table if he thinks you are not paying attention.
coffee spelled backwards is eeffoc. I don't give eeffoc until I have my morning coffee.
