The secret as told to me by a little black lady that made the best gravy ever.
1 tablespoon grease of choice, bacon, sausage, you can even use butter, 1 tablespoon flour, 1 cup milk. 1 1 1, 2 2 2, 3 3 3, always that ratio. Put grease and flour together over heat, mix until pasty and the desired brown color you want. Slowly add milk 1/2 a cup or so at a time, stirring with a whisk, increase heat to bubbling, whisking frequently. Makes it silky smooth. I generally do the 3s, and use about 2 1/2 cups of the milk. You can tell as it thickens to the consistency you like. As always salt and pepper to taste. You can tweak the measurements more to you and your families taste, but this is a good start. I generally do more grease and less milk.
