My niece in Lubbock grows some of the best, juiciest peaches around. Far better than even Parker County peaches, which to me are way over rated, anyway.
Fire up the smoker set the temp to 200-225. Cut peaches in half and remove the pit. Lightly brush cut edge with olive oil and set on the coolest grate in your smoker, should take about 20-25 minutes to cook, but check frequently.
Meantime, put a stick of BUTTER in a skillet on low to melt. Chop up 1/3 cup of pecans into small pieces. When the butter is melted and starting to bubble, just as it's about to brown, add 2 tablespoons of brown sugar and 1/2 teaspoon of cinnamon, stir in until they are dissolved. Then add pecans and stir slowly for about 5 minutes. Keep this warm until peaches are done.
When peaches are done, place one peach half in a bowl, drizzle with the pecans and sauce. Add a scoop of Blue Bell vanilla, or better yet, homemade vanilla ice cream. Drizzle some more on top of you would like. Enjoy.
This does work with apples too, I'm just not a cooked apple guy.
