We have decided to stay home all weekend and not even put the pontoon boat in the water so I plan to do some cooking. What is a good desert i can do? Gluten free gets extra points.

Make a peanut butter pie, for the crust instead of using regular oreos buy the gluten free oreos.

The wife makes a cold dessert with Kalua drizzled in the bottom of the pan. Than a layer of ice cream sandwiches more Kalua on top than a layer of cool whip topped with sliver almonds and a little more Kalua.
It's outstanding on a hot day.
The Kalua just adds flavor, no Buzz from this dessert.

The copy and paste from a Word doc didn't do as expected. So I just found the link online. Anyway this is awesome!! Put some Blue Bell Homemade Vanilla on top.

There is some restaurant on I-45 that is famous for this. It made it to this website.

In the heat I like fruit.
I'll take a small box of raspberries, blackberries, blueberries, and strawberries then pour about 3/4 cup of sugar over them. Let them sit for about an hour.

Make some whipped cream with a cup of heavy whipping cream, 1/2 cup of powdered sugar, and a little vanilla. May even through in a shot or two of rum.

Make some caramel dust. Coat a baking sheet with cooking spray. Bring the sugar to a boil and swirl until it's all dissolved and caramel-colored. Pour onto the baking sheet and let it cool and harden. Once hard break into shards, put it into a blender and pulse until it's finely ground. Run through a sieve to get the dust.

Add some chopped mint and a shot of Grand Marnier to berries. Put whipped cream on top of that. Put caramel dust on top of that.

Saw it in a movie once. It's really damn good.

late to respond ... but something easy and pretty quick is a dump cake. You can get gluten free store bought yellow cake mix.

1 can (21 oz) cherry pie filling (can use pretty much any type of canned fruit pie filling)
1 can (15 oz) crushed pineapple
1 box packaged yellow cake mix (also comes in gluten free)
1 cup butter

preheat oven to 325°, non-stick spray or butter 9x13 baking dish.
spread pie filling in the bottom of baking dish. evenly pour crushed pineapple over the top of the pie filling. sprinkle the dry cake mix over the pineapple. melt 1/2 cup butter and pour evenly over the top of the cake mix. cut up remaining butter into pats and place over the top of the cake.
bake in preheated oven until the top is golden brown and the pie filling is bubbling around the edges, about 40 minutes

you can also use fresh fruit by adding about a cup of white sugar and cooking a little longer.
