Smoked a ham of a 60lb (ish) sow I shot in November. I've always just took out the backstraps to grill and made sausage with the rest. Let's just say I'll be keeping more hams for the smoker. Smoked pork with firecracker slaw, bbq sauce, and jalapenos was a hit with the fam!

That is exactly what happened. I've lost 33lbs since the start of the year. This was my cheat meal for the week but I try not to go overboard on the starch. Was saving myself for the sliders.

Smoking a whole sow is definitely next on the list. I need to get me one of those torches for my propane bottle so I can burn the hair off and leave the skin on.

I have thought about doing that, but haven't yet. I go ahead and skin them out, then break the spine just above the hip, and tuck the hams into the chest cavity. This gives me a nice compact hunk of meat to smoke. Marinade in allegro hot and spicy and ginger ale. Season with salt and pepper and smoke. Wrap in foil halfway through the smoke to keep the meat from drying out. Damn. I need to go kill another small pig. I'm making myself hungry.

This is good stuff. I've never heard of cooking a pig this way rolled up, but it makes sense and I like it.

Leaving the skin on is a game changer, but you have to be willing to do the work lol.
