Cooked up some dove, wrapped them in prosciutto. Then I reduced some balsamic and mixed it with fig jam. I was actually shocked how good the sauce was, the balsamic was a great counter balance to the fig.

Looks wonderful. I have a real hard time with dove, if wrapped in bacon because it gets so dry by the time the bacon is done. The prosciutto would be a perfect combo, and the dove breast would still be moist. Love the fig jam too!

Dove Carne guisada. Or I shred it, mix it with cream cheese, and jalapeno. Stick it in an empanada and deep fry it.

When I do use bacon I’ve started to par cook it so that doesn’t happen to the dove.

Yeh buddy. I've gotten to where I love hot "dove wings" better than anything. Just fry the birds/breasts necked and then toss them in hot wing sauce/homemade mango habanero/ or Cholula.

I'm down with anything fig or balsamic.
