Cooked up some dove, wrapped them in prosciutto. Then I reduced some balsamic and mixed it with fig jam. Looks wonderful. I have a real hard time with dove, if wrapped in bacon because it gets so dry by the time the bacon is done. The prosciutto would be a perfect combo, and the dove breast would still be moist. Love the fig jam too!

Stick it in an empanada and deep fry it. But That Looks wonderful

Just fry the birds/breasts necked and then toss them in hot wing sauce/homemade mango habanero/ or Cholula. I'm down with anything fig or balsamic.
