My man.  That is a perfect representation of what blackened fish is supposed to look like. Amazing meal, great job.  Speckled Trout are still my favorite inshore fish to catch and consume.

One of my favorite ways to cook specks. Growing up fishing with my Dad running all over Red Fish Bay/Aransas Bay/CC Bay/Estes Flats & other surrounding bodies of water....anytime we started catching redfish, Dad would move us. He was always after limits of trout, didn't really care about reds. Flounder were always welcome. Sometimes when the reds were blowing up bait he would let us put some in the boat, but he just didn't want to waste too much time on redfish. Times have changed for sure. I will never pull off of redfish if it's on LOL. Until we have limits anyway. Redfish are great and I love them, as other species, but the Speckled Trout will always hold a special place in my heart both on the water and on the table.
