So I did a 4 day dry age experiment. Salted the heck out of it and set it on a drying rack in the fridge for 4 days. One of the most tender steaks I've ever done. 4 hour smoke then seared in ghee.

Those look wonderful. I typically season my steaks, bag them, and then cook the next day. Havent tried the dry aging yet!

No, and I salted, peppered, and a touch of worchester sauce before searing.

So do you just literally cover both sides in salt set them on a rack in the fridge ? I’m assuming just plain table salt will work for this.
