Wife and I want to go, no kids. We’ve done Cancun and Playa. Never been to Cabo. Any others to consider?

Jskin, I've done Cancun, Cabo and Puerto Vallarta and they have their pluses and minuses. Cancun for beach activity, club going and water based activities was the best of the 3, hands down. Puerto Vallarta is nice, a little cheaper than Cancun but more traditional MX. Some original cobblestone streets downtown, some decent restaurants. More shopping, beaches are more on par with Padre Island having grown up in Corpus Christi. Reasonable hotels. Some golfing and sight seeing excursions around. Cabo is the more expensive of the 3. Good golfing but expensive, $250+ per round. Nice offshore fishing for marlin, sailfish and dorado, tuna, etc. 20 years or so ago, we split a 35' yacht with another couple for 4-6 hours and at that our part was $300 or so, which included bait, drinks and deckhand costs. Guessing you could tack another $200+ nowadays onto that. Hotels on beachfront will run you in excess of $400/$500+ nightly. Nice clubs and restaurants in town and really nice excursions too but again pricey like ATV 4 wheeling in beach dunes, etc.
In summary, if on somewhat of a budget and just wanting a relaxing trip, I'd suggest Puerto Vallarta. If wanting more a beaching type thing and middle budget, I'd elect Cancun and if wanting a bit of all plus fishing on a bigger budget, I'd go Cabo. One warning on Cabo, the water since Pacific ocean based is cold...

If you're going for the beach/ocean the Mayan Riviera is the place to go - Cancun, Playa, Cozumel, etc - much better water and beaches, IMO.
If you're not as interested in that - Cabo or Puerto Vallarta. There used to be (15+ years ago) a place up in the mountains in Puerto Vallarta - food was good - sunset views were second to none...drive up was sketchy as hell - something carmelitas I think, but could be wrong. The bar at the top of the light house in the marina in Puerto is a good place to get a drink as well. I personally prefer the mayan riviera

Isla Mujeures off the coast of Cancun. Short ferry ride, super cool and laid back island.

Been to Cancun, Playa, Ixtapa, Vallarta, Cabo.
As crazy as this sounds, I would recommend Mexico City. Colonia Condesa area. It’s different, weather is nice and fairly safe.
Cancun now has seaweed. I’m going June 30th, only because Cayman is closed. Cabo is to dangerous to get in water. Sand sucks. Good fishing. Ixtapa is pretty much closed to American flights.

Leave $50,000 (cash) for each with a relative ----------- just in case. The gangs extort money from local school teachers, there is no way they would mess with a tourist !!!!!!

I recommend you do not go No kidding. If the place is so great, why are they all flocking here? Making a living. I have a friend who came here when he was 16 from Mexico. He joined the Army to become a citizen. He then became a prison guard and went to college. Joined the Dallas Police Department for 25 years. He told me July 6th he was retiring, moving back to Mexico. Said his American dream is over. He now has enough money to live a great life in his hometown, Lake Chapala Mexico. His longtime work partner has been in Mexico for a year already.

Cancun area is a 2 hour 15 minute flight from DFW. Same time zone, most US Carries cell phones work here. Easy to enter, no quarantine needed or covid test needed to enter Mexico. Cancun is very safe, and the place I am staying has a privated gated entry just to get into the area and then the hotel has its own privated gated entrance. Food is outstanding and everything is all inclusive https://atelierdehoteles.com/atelier-playa-mujeres
