Love tomatoes. No ‘maters were harmed in the making of this sauce. Jalapenos, onion, garlic, salt and lime juice. That’s it. That would be good on anything! Hope those japs had some heat They had the typical jalapeño heat. I really think I’m gonna tweak this recipe to my liking. I just can’t pinpoint what I wanna do to change it up yet. It needs just a touch of smokiness and a little more heat without changing the flavor all together. I was thinking about roasting just a few japs and adding 1-2 of a hotter pepper. Maybe ghost? We shall see. It’s gonna be fun to mess with it.

I like to do mix of japs and Serrano peppers in my green sauce. Cilantro and tomatillo sometimes too. I never make it the same way twice. Used a roasted poblano with japs and Serrano last time for that smokiness. Can tweak and play with it all you want and is great every way I’ve tried it.

That's what I did too until I finally hit that sweet spot that I was looking for. Since then, I haven't changed it. I'll make up a big batch & can it when supplies get low. Everybody around here likes it a lot. I'd be glad to share my recipe if anyone is interested.

Smoke the peppers , add a little fancy cumin I love smoked salsas, & yes gotta have cumin. I just picked up 3 new books I'm about to get into, because there is always something to learn.

I do something similar with boiled japs, like juice, garlic and salt….then emulsify with oil. Very close to pollo regio if you’ve had it. Would like to know your process. Pollo Regio's green sauce is as good as a taco sauce gets. Boil a dozen or so fresh japs until they are soft. Remove stems and put in a blender. Add lime juice….couple tablespoons maybe? Garlic powder and salt to taste. Start the blender and slowly drizzle in canola oil. It will begin to take on a creamy look, stop when the consistency gets right. If you’ve had Regio then you know what I mean. I’ve messed with it some, and don’t have an exact recipe, but this is as close as I have gotten.

Bring a pot of water to a boil - Drop in 1 large red onion/quartered 5 large jalapenos 5 serrano peppers 1 whole head fresh peeled garlic Boil for 5 minutes, then drop in 8-10 med-large tomatillos. Boil only until the tomatillos start to turn orange (cook any longer and they will bust on you). Remove from heat and let set for 30 minutes. Remove stems from peppers, and place all into a blender or food processor. Add 1 bunch of fresh chopped cilantro Add one small - med avocado Juice from 1 large or 2 small limes & 1 tsp sea salt 1 tsp black pepper 1 tsp celery salt 1 tsp cumin 1 tsp white vinegar Blend until fine. Can back off of peppers for less heat of course.
