Mentioned this on another thread and someone ask for pictures so I made some today.

Home made meat sauce ready to go, took a while all from scratch.

When we have left-over spaghetti (hardly ever), the wife and I like to take a Tupperware, layer in the sauce, cheese, noodles, and then sauce again. Freeze it up, and when you need it, it cuts and bakes just like a lasagna. Oh so handy, and good too!!

I would do that and add more cheese in this or just make Lasagna but the kidney doc has me on a 800mg sodium a day diet so that takes most of the cheese out of my diet. That plate gets me about 250mg for that meal using baby swiss for the cheese.

It is not lasagna but works for a good tasting substitute and the wife likes it. up plus it is easy

I like pasta but too much throws my glycemic numbers off, so we swap out some of the pasta for broccoli and or some chunked cauliflower.

Yup, 800 is very low almost half of normal low sodium diet. This is a guess of what it is but I almost never measure anything.

Browned 3/4lb hamburger with half cup or more chopped onion and same of poblano pepper and tsp garlic. 5 baby portabella mushrooms' chopped

Sauce was
No salt can of tomatoes and tomato sauce tomato paste
1/4 cup dry minced onion
tsp minced garlic
1/4 tsp Kroger Italian seasoning (no Salt) might have been a bit more but start there and go by taste
1/4 tsp chili powder
half tsp Mikes no salt seasoning https://mikesseasonings.myshopify.com/collections/all (use that a lot in our cooking)

Added all but paste in sauce pan and boiled a while to thicken some then added tomato paste to finish thickening.

Mixed it in the deep skillet the meat was in then mixed up serving size portion of meat and spaghetti to bake. Froze the rest in meal size portions
