My brother hosted and smoked brisket, ribs and chicken so I made some sides and desserts. I smoked a chuck and made some Texas Twinkies, made some roasted sweet potato salad, a lemon icebox pie and a bread pudding. I forgot to get a shot of the bread pudding.

Looks great Tex! Tell me more about this roasted sweet potato salad, got a recipe? I love sweet potatoes and that salad looks good.

It's something my wife typically makes but she showed me how one day and it's super simple.
Skin and cube 6 sweet potatoes
Toss in olive oil, paprika, garlic, onion powder, salt and pepper and roast on a cookie sheet in a single layer at 325 until tender but not mushy
Dice 3 or 4 japs
Dice 4 or 5 roasted red peppers
Juice 4 limes
Chop a couple green onions
Toss everything together with a little more olive oil
Done.
