I cured for 8 days and finished smoking for 3.5 hours till an internal temp of 150 degrees. Has a great flavor.

TPACK that looks great. For the last several weeks I have been looking at recipes for Canadian Bacon and then I saw where you are making some.
Mine is soaking now and I am going to cook Thursday. Yours looks perfect inside and outside

I was afraid it would be to salty, but it wasn`t. I rinsed it off and soaked it in fresh water for an hour.

I will rinse and soak next time as well. I almost added a few jalapenos to the brine, but I was afraid it would be to hot and my wife would not eat it. I did add a little maple syrup to the brine and it did have a bit of sweetness to it.

I do not like maple syrup, but I like Ribbon Cane syrup, so I added a little to mine. I also added some red pepper to mine. With my RH I could tie knots so I did not get to tie mine.
Your slices looked so good. I have a meat slicer so maybe mine will work fine.
I am so ready for Thursday.
