So we decided to grill tonight, and wife wanted chicken. While at the butcher counter, they had 2” thick, prime top loin NŸ strips. Sold!! My own dry rub mix of season salt, garlic and onion, coarse black pepper, sage, rosemary, and thyme. After doing hers, I cranked it up to the “Hell” setting. 3 minutes on each side, and 1 minute on the edges - wasn’t gonna ruin this baby!!! Drizzled with melted butter. The corn, mushrooms, and wine was welcome but un-necessary. You could make a meal of just the meat; melt in your mouth rare.  . A NY Strip Steak is my favorite steak. I trim all of the fat off of mine just like you did. Look Great !! Not a wine guy though.
