I have never been so disappointed in a planned meal, that turned out to be so wonderful!! An internet friend gave me a huge package of bison chorizo sausages from his Montana bison, and told me to try them. I was excited to say the least. I gave some to another friend with a culinary flair like me, and his report on them was terrible. Oh No, I thought, what do I have here??
I fried two of them up tonight, and did my best to make them crispy cased, and perfect. Nowhere close to any Mexican or Spanish Chorizo I have had before, had a lot of rice and/or bran filler in them, and no real cumin bite! But I'll tell you what, it was some of the best tasting boudin I have had!!! Thank the Lawd!!! Quickly broke out some 12" tortillas, fresh shrimp to creole up in butter and spice, and crunchy cole slaw and jalapeños. Avocado for the squish, and Tapa Tio set them on fire!!
To say that I'm full would be an understatement!!
