No joke my wife tells me this morning that she doesn’t like gumbo. 30 minutes into the roux I get a text from upstairs, “what are you cooking? It smells really good”. It’s go time. Thanks guys! Not gonna lie the roux was a pain in the [censored]. People don’t lie when they say it takes a good hour of constant attention  I used avocado oil. I think the high smoke point helped me keep from burning it a few times. Lots of stirring and lots of heat management.

I think most people fail at making a proper roux when trying to use an electric stove. Like you said, proper heat management and quick response with gas!!
