Well sort of, the wife brought home a tri tip because she wanted to see why everyone thinks they are so great. However it was mis-labled.
I knew it was a top sirloin roast but didn’t want to burst her bubble so on the pit it went. Mesquite and peachwood and off set to 110 and then seared to 130. Came out better than I expected and fairly tender. Added some parmesan roasted potatoes and a homemade horseradish sauce.

Looks lovely. Sometimes they try, but just don't make great choices. My wife has brought home some cuts that make you go "Hmmmnnn, what do I do with this!" smile

They aren’t bad. I reverse sear like you did. It’ll start getting more popular as Texas becomes over run with the Cali folk trying to change our ways.

How did you come up with such a great presentation? Asking for a friend.

Wasn’t really trying for a presentation, Basically just threw it on a plate . The best value is it made some good fajitas last evening and a dang bit cheaper than skirt.

Tri Tip? Can't overcook it. Medium rare is as far as you want to go with it or yes it will get tough on you.

I usually pull at rare and then tent it in foil and let it come up to about medium rare before slicing. One of my favorite things to eat.

On edit, sorry, don't mean to imply you're overcooking it. May just be a bad cut. Costco has prime grade Tri Tips that are $10/lb and are awesome. I've never had a bad one from there. I just mentioned it because folks who like their beef medium or more usually don't like tri tip because it's tough.
