For first half of the family tomorrow we’re doing Al Pastor tacos and Mexican Street corn for lunch.

Second half of the family and dinner I’m throwing a 17 pound brisket on tonight at midnight and smoking it low and slow all night at 200 degrees and finishing it off tomorrow along with some armadillo eggs and cowboy beans.

Got it all trimmed and made my rub last night. It’s been resting in fridge ever since. Made some home made BBQ sauce today, it needs to meld the flavors over night. Will smoke the armadillo eggs tomorrow along with the brisket when it’s time and slow cook the cowboy beans for 5 hours tomorrow.

Crappie and possibly some catfish if I catch some in the morning. Wife may object I've cooked fish3 times the last week. They ain't nothing better than fresh fish,purple onion, light bread and home fries.

Going to my nieces in Keller for family gig. I am going to make stuffed Jalapenos, half with smoked brisket with cheddar cheese, the other half Shrimp with Pepper Jack cheese.

We had ours last night. Started out with jalapeno poppers and a few drinks and the the main course. It was a double smoked spiral ham, green beans with bacon and onions, roasted potatoes, salad with all of the fixings and rolls..... I was going to take a picture of the ham and post because it looked awesome with an apple/habanero BBQ glaze on it , but we were running low on time and I forgot. It tasted great after 3.5 hours on the pellet smoker.

Brisket has been wrapped in some butcher paper to finish off to 200*.

Beans have been prepped and put on low and slow in the slow cooker. Shaping up to be a great day already.
