I had 2 chuck roast that I threw on the smoker yesterday while I was working on a boat project in my shop. I put some of my home made BBQ sauce in it and mixed it up. It makes good BBQ sandwiches but not nearly as good as a brisket does. This was my 2nd and last time smoking a chuck roast. I had read several times that it made great BBQ, so I wanted to try myself. It`s not even close if you ask me. For smoked roasts sometimes we grind up the leftovers and make a meat sandwich spread. Add some chopped pickles, mustard, mayo and it is good to go. Or grind it up and add some enchilada sauce to make killer tacos and burritos.

I started to get my Cabela`s grinder out and grind this with the coarse grind plate, but it would have been to much trouble ,so I chopped it with the old Forschner chef knife. I worked at a supermarket that had a high volume deli that took all of the ends of the briskets that didn`t make good slices and grind them. They would make chop BBQ out of the ground brisket.

I use chuck roast with burnt ends pretty often. It gives brisket a run for it's money. It still loses, but for the price I can't complain. It gets damn close enough.

I use chuck roast with burnt ends pretty often. It gives brisket a run for it's money. It still loses, but for the price I can't complain. It gets damn close enough. I don`t even think it is a very good value compared to briskets. Chuck roast cost about 5 bucks(or more) per lb. compared to 3.59 for prime brisket(HEB price). It is a smaller piece of meat so it will cost much less. I probably had a thousand people ask me over the years "what is the best roast to buy" when I ran a meat market. My answer was always and still is a chuck roast. It belongs in a crock pot with potato`s, carrots and onions and not on a smoker trying to imitate a brisket. This is Texas and I think there are 2 things you should never do, one is putting beans in chili and the new #2 is a chuck roast trying to impersonate a brisket. It`s not even close. The value I was referring to is size. I usually smoke a chuck roast with my brisket specifically for burnt ends. Who is saying it taste like brisket anyway or better than brisket? It's called poor mans burnt ends because it's an alternative not a replacement. I'm not trying to be argumentative, but putting it in the same category as beans in chilis is downright wrong.
