The MIL loves Irish butter, and Irish cheese; time to give it a try. Had some awesome North Sea scallops seared in butter tonight, with pasta alfredo and their leftover cauliflower risotto. Had some Hatch Chile/jalepeno jam to top the seafood, a little dab will do ya. All in all, pretty amazing!!
