I love to cut my own out of wholes. You can be much more particular, and trim them exactly to YOUR tastes and expectations. Beautiful!!

Looks good Bill, as far as chain stores I prefer Walmart or Kroger beef over HEB. $13.99/lb is a good price for cuts, Walmart sells choice tenderloin steaks at $18/lb.

The best part of cutting a whole tenderloin is cutting around 8" of the tip and leaving it whole to cook over a wood fire. Steaks are good but the charred chunk of meat is outstanding.

The best part of cutting a whole tenderloin is cutting around 8" of the tip and leaving it whole to cook over a wood fire. Streaks are good but the charred chunk of meat is outstanding. Ever make tenderloin nachos with the end cuts. Try it. You might like it. I put cilantro in there.
