How do you eat them? I haven`t had them since I was a kid. My mother made them like a salad dish. I am going to try and make them like she did because it will be good on my KETO diet(down 23 lbs.).
She would coarse chop the mustard green in a bowl with onions and radishes. Then she would fry up some bacon and chop into smaller pieces and put into bowl and mix all together.
To finish it off, she re-heated the bacon grease and poured over the top and mixed thoroughly and added salt and pepper. It wilted the mustard greens slightly, but did not cook them and they tasted great.

Put a piece of bacon or ham hock in the pressure cooker with a little salt and water and vinegar. 20 minutes.

The Spanish food section of a lot of supermarkets have ham bullion, which is a lot cheaper than a smoked ham hock- not as good but pretty close. Turkey broth goes well with greens. Mustard greens cook quick- not like collards.

Mustard greens cook quick- not like collards. Yep. I use that powdered chicken bullion in greens sometimes instead of meat.

Hard for us to get greens of any type here; very seasonal. I found that these different bases are the best, compared to the bullion cubes or powders. Glad I saw this answer, 'cause I'm out of the Ham base, and want to do some navy beans and ham soon!!

I cook Collards & Mustards the same way, but Mustards cook a lot faster. I chop up a few boneless smoked ham hocks, brown/caramelize them good and remove. Then drop in one chopped onion of your choice (I prefer red), and one stick of unsalted Falfurrias Sweet Cream Butter. Caramelize the onions really well, then add a few tablespoons of minced garlic and stir for a few minutes. Then add the ham hocks back to the pot, add the chopped greens, and cover with low sodium chicken broth and a few TS of vinegar. Season with Fremin's Magic Dust, or S&P.

If you like greens, this pal of mine grows both Collards and Kale. Now and then he gives me a LEAF bag full of them. I love collards but the kale cooks in only about 5 minutes. I have sort of gotten into kale, years ago I hated it.
