First, you've gotta have some good music turned up loud.

Then you get to cooking.

Browning off some homemade pork & green onion fresh sausage.

There ain't no Kitchen Bouquet crap or liquid smoke in this house.

Looks mighty tasty Skinner. No liquid smoke for me either. Can't stand the taste. A lot of BBQ places have it in their sauce and it ruins the sauce. Never had Kitchen Bouquet.

People pay for a base in the store. It's easy to do and WAY better homemade & fresh. Yes, you can taste the difference. I have compared.

Almost done, just needs to simmer a little more while I'm cooking rice & corn.

A good friend of mine refurbished this spoon, and gave it to me as a gift. I will use it until it's time for me to cash in.

Natural pork casings are the best.

Pure greatness. With or without the music.

Sorry folks, I got side tracked last night. I just tackled this plate, I'm stuffed!

Nothing like a good Cajun rice & gravy, especially with a quality pork & green onion fresh sausage and some homemade smoked deer sausage.

Thank you. Kitchen Bouquet is a sauce very similar to liquid smoke, both are nasty IMO and I can taste either from the first bite.

Kitchen Bouquet is a pre made ingredient for folks that don't know how to make a gravy.

Not being stuck up about it, it's just the truth...and the flavor is different as night & day IMO.

Always different crowds & that's OK.....home made roux/store bought roux. Kitchen Bouquet vs learning how to brown your meat properly and use those onions/butter/vegetables & other ingredients to make a base that will give your gravy the flavor it should have.

Some folks may say, "Ugh, that looks horrible. It looks burnt". You won't say that after you eat it.

Thank you Sir. I'm about to eat one more plate, and freeze a bag for another time.

My 10 yr old Son, followed by his 6 yr old Sister made it very clear to me today.......that this weekend when we go camping we are making that boudin stuffed backstrap. My little boy said it's his #1 favorite, so we're doing it. up
