Leggs is good stuff. The chorizo mix is amazing as well.
Jimmy Dean does burn easier. I try to avoid it. I prefer thick sliced bacon from the local butcher anyway.

Good point DC. A whole lot about good breakfast sausage (in fact all sausage) is what you don't put in it. We use non-iodized salt, black coarse pepper, red pepper and garlic - only, nothing else (zero).

Sage is considered phooey here in these parts. Get a rope stuff.

I have never had a breakfast sausage I didn't like, my favorite is spicy venison. Breakfast is one of my favorite meals but I don't eat breakfast but a few times each month.

Eggs, sausage, grits, biscuits, toast, bacon, coffee, milk, oj....can't help myself

Every spring I get 50 to 60 pounds of hot breakfast sausage made from young wild hogs at Fishers in Munster . It's some of the best I ever had but in a pinch I would take it to Kuby's .

Man If you like Legg's Chorizo Mix, then try the "La India" brand chorizo mix and just follow the instructions on the label. It's really good, my favorite.

We go with Whataburger here, or Owens Hot.

Take a pound of ground meat and mix a pound of Owens Hot with it, and make burger out of it. You'll thank me later.

Saying that on weekends, its usually from the processor or store bought sausage, and I have come to the assumption

Yall a bunch of picky bastards. If you can tell the difference between brands on a saturday morning, yall didn't drink enough the night before
