Happy St. Patricks Day to everyone. Upholding traditions is certainly fun, especially when it tastes good!! Hope you all are enjoying good health, and full bellies right now.

Yes, corned beef brisket. Some like to chunk it, I prefer sliced nice and thick, so I can make hash in the morning with leftover meat.

Buy a corned beef brisket on the after St. Patties day sales and smoke it. Good stuff.

I think that's called pastrami at that point.

I'd go with cured.

Here`s a brisket I cured made into corned beef for sandwiches a while back. Beats the stuff you get at the store.

Mine looks the same but I add rutabagas. After "the day" I slice and freeze the corn beef for sandwiches and potato salad and then have the left over veggies with hot dogs. Actually pretty good.
