Do y’all cure any pork? Here’s a video on how a buddy of mine does it. He uses tender quick. I use kosher salt and brown sugar with some pink salt to make bacon. I’ve tried tender quick but mine seemed real salty. His taste spot on. Not sure what I did wrong. I thought some of y’all might enjoy his video. Thanks https://youtu.be/8SEvxVmnfw0

Canadian bacon done right is hard to beat, we usually buy 8 tenderloins and make enough for the year

Yes it’s on my list also to build one. It smelt awesome in there. I think I would hang my shirts in there if I had it. Lol

Do y’all cure any pork? . . . I’ve tried tender quick but mine seemed real salty. . . Not sure what I did wrong Did you rinse it with cold water after taking it out of the cure? Or soak it in ice water for an hour after rinsing before you smoked it? FWIW, I have always used tender quick. It's cheap and works great. I still have a piece left I need to cook up when I make some biscuits

Once out of the cure I do a light rinse under the faucet, no heavy scrubbing or soaking. After this right onto the smoker.

I’ll give it a try. How much do you apply and for how long. Do you put anything else with it?
