What about the parm crusted venison? I took backstrap, cut it into 3" pieces, turned it up on its side and pounded it out to about 1/8"-1/4" thickness. Rolled it in flour, then egg wash, then the breading which was Italian bread crumbs and parmesan cheese, 50/50. Then I pan fried it, only a few minutes on each side, it's easy to burn the bread crumbs.
