A Sow that lost all it's piglets in the big freeze showed up in my trap Tuesday night and since I was heading up there Wednesday I decided to close the gate. Since I had no room in my freezer, I burned off the hair and put the hams and shoulders in salt to cure them the old fashion way. Put a cloth over the cooler drain and left the drain open. Used 75Lbs of non-iodized salt to put a 2" base and at least an inch of salt between each piece with an inch on top so it was completely encased in salt.
Just wanted to try this to see what it would be like in 6 weeks.
Anyone ever try this before?
