Pizza night tonight. All fresh ingredients including the dough. Dough is from central market and the same stuff they use in their cafe. They make it fresh daily and I can’t make it better than they do so I quit trying. We use a baker stone pizza oven that sits on a standard propane grill. It’s really hard to beat.

Looks good. Are you able to close the lid on your grill to get even more heat, or do you have to leave it open?? I can get my temp up to 525, with the lid down, and no wind.

I can close it but I’m 50/50 if I do or don’t. I’ve never actually measured the temp in the oven but I’ve read it gets close to 700 degrees. Bakerstone recommends not closing the grill but I always do it at the beginning. I cook the pizza for 3 mins untouched then rotate every 45 sec-1 min until I’ve hit the other three sides. Typically done then.

I really hate not have a Central Market anywhere close. I love that place. It really is a fantastic place for fresh food. Reasonably priced and top quality stuff, especially the seafood.

How long does the dough keep? Couple days in the fridge fresh but you can freeze it and it’s good for a couple months.

Now that pizza looks pretty darn good Every now and then we stick our nose into Central Market, bought a Key Lime pie there yesterday that is pretty good.

I forget who sells them, maybe it is betty crocker? but HEB sells pizza crust packets for $1 each. Have had them turn out really good in the past. Just add watter mix and let sit in a warm spot for 5 min then roll etc.
