Lazy morning so far, and girls sitting around in PJ's. Wanted simple and easy, so muffins, juice, and coffee sounded really good.
HoneyCrisp apples, walnuts, double the cinnamon, and plenty of streusel topping. Made a double batch, so that we had bread for dessert for another meal later. Warm melted butter makes the world go round too!!

We process up all of our zucchini in the summer, and shred it, before vacuum-packing in bag sizes for making bread. If I had thought ahead, I could have done one of those at the same time. That would have been good!

OK, no guarantees on my rememberer!!

2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup melted butter (1 stick)
1 cup white sugar
2 large eggs
1 teaspoon vanilla
1/3 cup milk
2 tablespoons oil
1 1/2 cups chopped apples

1/2 cup packed brown sugar
1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
1 tablespoon butter

Preheat oven to 375 degrees F. Grease a large 6, or standard 12 cup muffin pan.

In a medium bowl, mix dry ingredients - flour, baking powder, baking soda and salt.

In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla and milk, continuing to beat.
Gradually blend in the flour mixture. it will be pretty thick, but the apples will release moisture as they cook down.
Stir in the chopped apples ( can use large pieces, if blended)
Spoon into the baking cups, or greased muffin pan

In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs.
Sprinkle mixture over tops of the muffin mix, in muffin pan.

Bake 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
Allow to sit 5 minutes before removing muffins from pan.
Cool on a wire rack, to allow air circulation.
