If you're like me, the smell of pecan pie baking is ALMOST as delicious as eating it. Hot out of the oven, and this baby is molten lava. Don't spill it. scared

The only thing better than a good pecan pie, is a chocolate pecan pie! Prasek's in El Campo makes the best I've had. Buttermilk is still my favorite though.

For anybody reading this and having pecan pie cravings, but no pecans,....This is awesome. I've made it several times. I typed it out from this site because her site copies and pastes with a gray background.

Mock Pecan Pie

So far everyone that has eaten this pie went on and on about how good it is. Some liked it much better that a real pecan pie. It has a great crunchy texture on top, (oatmeal floats to top and browns).

¾ cup granulated sugar
1 cup oatmeal, quick cooking type OK / I use 1 minute oats because that is what I have.
3 eggs lightly beaten
2 tsp. Vanilla
¼ cup melted butter
¾ cup light corn syrup, (Karo or store brand, and light is OK)
9” unbaked pie crust. I like the deep dish crust. Wal-Mart Great Value has been great.

I’ve done this several times and have figured out how to make this a quick prep time recipe. I even rearranged the ingredients from the website to avoid confusion or leaving anything out.

To make this quick and efficient I put a frozen crust in the oven while pre-heating. Keep an eye on it as you go forward and pull it out as soon as it is thawed.

I measure the sugar and oatmeal first and pour those two dry ingredients into a large plastic cup and set aside. This is to leave the measuring cup clean to get the liquid ingredients taken care of first.

I first put the butter in a Pyrex measuring cup and melt in the microwave. When melted and sitting at the ¼ cup level, I add the ¾ cup of Karo, which brings the mixture to the one cup level. Also, while melting the butter I put the eggs and vanilla in a bowl and whisk.

While waiting on the butter to melt, and while the crust is thawing during a pre-heating oven, I whisk the eggs and vanilla.

So: The butter is melted. I add the karo into the pyrex up to the 1 cup level and pour into the egg and vanilla mixture and whisk. Then throw in the oatmeal and sugar. Whisk well.

By now the oven is at temp and pour it all into the thawed crust.

Colleens’s recipes said 350 degree oven 50-60 minutes or knife pulled out clean. I say 60 minutes and roll with it.

Summary: One great pie with possibly the lowest prep time for an outstanding pie ever!
