These are my new favorite taco with an Asian twist
First cover the ribs with flour, salt and pepper
Add butter to pot, brown ribs on all sides
Remove ribs, add more butter, onion, celery, carrot and a bottle of red wine. Reduce wine by half
Add ribs back to pot, add thyme, bay leaf and fresh parsley. Add beef broth to cover ribs. Put lid on and bake in oven for 3.5 hours at 325 degrees
Strip rib meat, disregard the nasty rib stuff and everything else, cut up brussel sprouts and red onion
Saute the rib meat, brussels and oinion with salt and pepper. I also cook the corn tortillas on the burners during this step.
I prepared the gochujang sauce ahead of time. There are tons of recipes for this topping.
Bring it all together at the end.
