Since no one posted any pictures using baking soda thought I would give it a try. Please tell us how you made it! I'd like to try the baking soda trick, but would like to hear your detailed description on exactly how you made it!
You can make the recipe two ways, 1 - create a chili paste with thai chilis, ginger, garlic, cilantro, and shallots or 2 - use a yellow curry paste which is pretty much the same thing plus curry powder and turmeric. If you hate curry, this does not taste like curry. Couple of carrots, cucumbers, and green onions (whites only save the other end for garnish) cut up and put in a bowl of 1 tablespoon seasoned rice vinegar and 1 tablespoon sugar for about 20 minutes stirred up occasionally. Salt as needed whisk together 1 Tbsp smooth peanut butter, 1 tbsp yellow curry or chili paste, 2 tbsp mayo, 1 tbsp mirin, and 1 tbsp water cube up chicken, I seasoned with smoked paprika, smoked chili powder, salt, and pepper. Put seasoned chicken in a bowl and add baking soda. Add a 1/4 cup and see if that covers the chicken. It wont cake onto the meat, it will only lightly dust it. The excess will be in the bottom of the bowl, so don't worry about adding to much baking soda. Add oil to pan and cook without moving for about 3-4 minutes per side. Toss cooked chicken in peanut sauce. Put rice on plate, vegetables on rice, chicken and sauce on top, and garnish with green ends of green onions. Whole thing takes about 25 minutes.
