I have never used ANY other pepper than black pepper. Never white. Never pink. What are the differences in all of them? I made dinner tonight and I happen to love black pepper, however the wife not entirely so much. My filet mignot crust was 2tbsp of black pepper, 1tbsp coarse salt, maybe 1/2-3/4 tsp garlic powder and 2 sprigs of Rosemary, minced.
Ran in the food processor for a bit and coated the meat.

I know there’s got to be a more subdued pepper. Which one is it and why/how do you use it?

Shows just how little I know, and what I have gleaned from son-in-law chef.

Black Pepper - basically the cooked and dried green peppercorn. Strongest of them all, and my favorite. Fresh ground is the most potent, I prefer coarse ground McCormick in the store.
White Pepper - Cooked green peppercorn, then peeled to get center white seed. Not as hot, or spicy. Has a distinct earthy or musty smell, like mushroom, lot of people like it cause it doesn't show up in dishes, where you want pretty. My least favorite.
Pink Pepper - not really a peppercorn, but the fruit of a pepper tree. Medium spice, has a distinct floral smell. They put a lot of these in the mixes for pepper grinders.

Interesting! I was hoping to find the same flavor, just tone back the spice a little for the sissies. Personally, it’s perfect for me.

I would just less of it for the spousal unit. Mine likes black pepper, just not the quantity I do.

yep, black pepper for me and lots of it ... my wife only a slight dash is plenty if any at all. I have tried white pepper but as stated above, just a slight musty and little heat. When cooking, I usually go pretty light on any type of pepper to suit the masses, the put a healthy blackening onto the portion on my plate.

Funny reading this as I ran out of black peppercorns last night making soup. Had some white ones I ground up in there. Definitely want black pepper from here on out I think.

Someone gave me a pepper grinder, it had black white pink and green pepper corns in it. I personally did not care for it at all. I like black pepper and red pepper.

One day I’m gonna start spinning up some pepper grinders for my buddies. They sell the internal mechanism only.
I just have to be able to get to the thing. My garage is a disaster area. Bad. Lol
