Don't have a very good weekly menu planned, so improvising this week before grocery shopping over the weekend. Doing a little Tuscany dinner experimenting tonight. Turned out pretty damn good!! Pork loin steaks in sautéed onion, mushrooms, sun-dried tomatoes, spices like parsley/sage/rosemary/thyme, white wine and heavy cream. Baked spaghetti squash, forked out of the shell and covered with butter/salt/pepper. The sweet mini peppers were cleaned out like regular poppers, but I stuffed them with Italian bread crumbs, Parmesan, mozzarella, and butter. I actually love these cold, with hummus, or cream cheese in them.
