Recently I saw a Cajun Ninja video on making Crawfish Etouffee'. Last night I assembled the ingredients for my first attempt. Just in case it was a bust I made a half recipe.

It was delicious, but very time consuming. Definitely not something to attempt to throw together when in a hurry. The vegetables are cooked long enough so that they begin to caramelized and break down. I am sure that the caramelized vegetables contributed greatly to the overall flavor of the dish.

I used a home made salt free Cajun seasoning mix in making the dish. So at the end of the cooking I needed to add a bit more salt than called for in the recipe.

Looks great. The caramelization of your vegatables is where it’s at, especially the onions.

I have a quick etouffee recipe somewhere, if I can find it I’ll share it with you. Been a few years since I’ve used it, so don’t remember from memory. It’s good though, and fast.

OK, here's that quick etouffe recipe I was talking about. I prefer making mine about like The Cajun Ninja's, but this recipe here is faster since you're subbing Cream of Mushroom Soup for the roux. First time I heard this recipe I said, C'mon man lol......but don't knock it till you try it, it's pretty good. Came in handy after working late. Of course, can also use shrimp, or a combination of either with lump crab meat. Think I'll make this again tomorrow actually....

Try it fried in bacon grease with caramelized onions & butter/crisp bacon/garlic and some seasoning.

You could fry my dog’s turds in bacon grease with caramelized onions & butter/crisp bacon/garlic and I’ll make me a sammich!! And probably ask for seconds!

TLoving, I would absolutely eat that etouffe!!!! Looks awesome and I bet I'd be snoring pretty hard after eating two bowls of that.

Thanks for posting your recipe. I will try your version someday since it appears to be a lot faster from start to finish than the recipe I used.
