My property has a ton of post oak and we love to cook on it. Steaks come out great but chicken breast seem to always come out undercooked, so I came up with a solution that works pretty damn well.
Get coals built up
Move big logs off and let coals cool for 5 minutes
Cover with cast iron pot, ribs down and let cook for 30 minutes.
Came out completely cooked and very juicy.
