Had some left over Taco meat so why not right? Lightly cooked some fresh diced Jalapenos, Baby Bella Shrooms then threw in the Taco meat, right before I folded the omelette added the diced Tomatoes and Gouda cheese. Thanks everyone it was pretty darn tasty. Next time I am going to add some crunchy Tortilla strips on top of the cheese right before I fold it.
