Everything looks great! Diggin' that sausage.
In my 20's I used to do all kinds of things with brisket, my favorite then was to stuff and inject briskets. Then let them marinate for 24-48 hrs before they hit the pit. It was different, but everyone liked it. With the smoked sausage/onions/bell peppers/garlic/jalapenos/butter & seasoning steaming on the inside, injected meat, and slow smoked they were always stupid tender & full of flavor. I just eventually went back to the old school traditional method later in life. If you like it, that's all that matters!

If they were this expensive back then, I don't think I ever would have bought one except for maybe special occasions. Yes Sir, same for cabritos. A buddy & I raised cabritos in the early 90's, we sold them for $20 (Beeville/Refugio area). When we raised the price to $25 we caught all kinds of grief LOL.

Looks beautiful; what did you inject it with? I've done lots chickens and roasts, but never a brisket.
