Good point about sickness occurring from them. I do love them raw, but have become much more careful about it. Only cold water oysters anymore, and I want to know they were brought in very fresh to a reputable restaurant that knows their suppliers.

20-30 years ago, we ate them from all of West Matagorda Bay all the time, even out on the boat and just rinsed in the live well. No more warm water oysters that aren't fried, or cooked well in chowder. A good friend ate them in Cabo couple years ago, and got very sick with Vibrio Fulnificus. Put him in ICU for 3 weeks, and almost died. Took 4 months to recover!!!
