Thanks to Cast for the tip on Wylie frozen berries. Kmon1 for the idea of the topping for muffins - wife says that's a definite winner. They kept squawking about their throats being cut, and starving to death, and all sorts of references to the Donner Party - you'd think being 5 minutes behind schedule for breakfast was the end of the world!!

Anyway, it came out reasonably well, even tho I forgot to rinse the berries in my haste, and turned all the batter blue also!! Topping was berries, cream cheese, powdered sugar, and vanilla for us.

This is just my basic blueberry muffin mix, and makes 6 big muffins. I just doubled it for this big batch. I almost topped the whole cake with the cream cheese icing, but then would have to keep it in the fridge.

1 1/2 cups all-purpose flour
3/4 cup granulated sugar, plus 1 tablespoon for putting on muffin tops
1/4 teaspoon fine salt
2 teaspoons baking powder
1/3 cup neutral-flavored oil; canola, vegetable and grape seed all work
1 large egg (this adds some firmness to the cooked muffin)
1/3 – 1/2 cup milk (I use skim) , dairy and non-dairy both work
1 1/2 teaspoons vanilla extract

Add all dry ingredients first, then the wet. Stir well, and then gently fold in the berries to prevent mashing and losing shape.

6 to 8 ounces fresh or frozen blueberries; a note about frozen berries, I prefer to thaw in a bowl in the fridge overnight
**Should rinse the berries, or the batter will be blue (about 1 cup)

For the topping, I used Kmon1 info from another post.

1/2 cup of berries
1 - 8 oz. package of cream cheese, softened
4 teaspoons powdered sugar
1 teaspoon vanilla

**If you warm the cream cheese in the microwave to soften, then after mixing put in freezer for 10-15 minutes to stiffen up again

Kinda depends on your own particular oven, but 375-400 is recommend. Mine is gas, and seems to run a little hot, and overshoots a little on temp. I set most of my baking at 375 degrees. Did the two pans side-by-side on middle rack, and muffins for 20, and 25 on the pan cake. As always, stick a toothpick in the center and if it comes out clean its done.
