This is just my basic blueberry muffin mix, and makes 6 big muffins. I just doubled it for this big batch. I almost topped the whole cake with the cream cheese icing, but then would have to keep it in the fridge.
1 1/2 cups all-purpose flour 3/4 cup granulated sugar, plus 1 tablespoon for putting on muffin tops 1/4 teaspoon fine salt 2 teaspoons baking powder 1/3 cup neutral-flavored oil; canola, vegetable and grape seed all work 1 large egg (this adds some firmness to the cooked muffin) 1/3 – 1/2 cup milk (I use skim) , dairy and non-dairy both work 1 1/2 teaspoons vanilla extract
Add all dry ingredients first, then the wet. Stir well, and then gently fold in the berries to prevent mashing and losing shape.
6 to 8 ounces fresh or frozen blueberries; a note about frozen berries, I prefer to thaw in a bowl in the fridge overnight **Should rinse the berries, or the batter will be blue (about 1 cup)
For the topping, I used Kmon1 info from another post.
1/2 cup of berries 1 - 8 oz. package of cream cheese, softened 4 teaspoons powdered sugar 1 teaspoon vanilla
**If you warm the cream cheese in the microwave to soften, then after mixing put in freezer for 10-15 minutes to stiffen up again

Kinda depends on your own particular oven, but 375-400 is recommend. Mine is gas, and seems to run a little hot, and overshoots a little on temp. I set most of my baking at 375 degrees. Did the two pans side-by-side on middle rack, and muffins for 20, and 25 on the pan cake. As always, stick a toothpick in the center and if it comes out clean its done.
