Made another batch, but this time with a new recipe. I may or may not tweak it, but it's a keeper.

First, you have to have a helper. Used to enjoy making sausage with my oldest two kids, but now they're grown and down the road. I get to do it all over again with my youngest two and Grandson when he's bigger. Life is good.

My baby girl loves to hunt, fish, & help me in the kitchen. She gets mad when I do stuff without her LOL. She is currently in knife safety, sharpeining, & maintenance class.

And yes that dent in the wall by the plug is from her forehead. Came running into the kitchen, tripped, & BAM right into the wall like a Pachycephalosaurus. Got up and looked at me to see if she was in trouble, and then took off running. Since then her nickname is hammerhead. No idea where she got that from.

Did an 80/20 mix with pork butt/bacon ends & pieces. It's a little greasy, but flavor is on point. This is the first batch of sausage I've made using Fremin's Magic Dust as the main seasoning, and it dang sure won't be the last.

Test patties are on point.

In the Magnalite to brown that sausage good. If you've never eaten a good Cajun smothered fresh sausage, you really need to. It's one of my favorite things to eat.

Sausage browned good, and now the onions & butter are doing their thing. That's gonna make a good gravy.

Time for the rest of the trinity & garlic.

It's all about that base. Now time to add broth, water, & sausage back to the pot to simmer for a few hours. Gotta make some rice & corn and will be all set for supper.

More pics to come. Thanks for lookin'.

She is either Texas chainsaw massacre which I like or she is a future chef which I like. Either way, good job young lady.

That’s definitely a mans sized knife.

LOL. She has a little pink knife I bought her a year a go, but can't cut meat with it. Easily. Good little training knife though.

Sounds like you need to sharpen that pink knife I think she is ready.

I really need to start making my own sausage. That looks better than anything you get from any of the processors around here
