I like to smoke sea salt and make some various rubs and seasonings with it. A nephew of ours had a big limb blow down from a red oak tree in his backyard and saved the wood for us. I decided to try a Santa maria style rub with the red oak. Smoked my salt and cracked peppercorns with the red oak only. Salt went for 20 hours and the mixed peppercorns for about 8 hours. My mix consists of: red oak smoked sea salt red oak smoked cracked pepper corns, 6 peppercorn mix dried garlic dried guajillo chile flakes I did the salt and pepper at a 5:2 ratio Post up some others if you have them. ![[Linked Image]](https://texashuntingforum.com/forum/pics/userpics/2021/01/full-61217-277573-red_oak_wood_copy.jpg) ![[Linked Image]](https://texashuntingforum.com/forum/pics/userpics/2021/01/full-61217-277575-dscn3653_copy.jpg) ![[Linked Image]](https://texashuntingforum.com/forum/pics/userpics/2021/01/full-61217-277577-dscn3658_copy.jpg)

I've played around with smoking seasonings with various combinations. Mostly sea salt, course ground black pepper, onion & garlic powder and sometimes paprika. I would love to dehydrate some jalapeno and grind it down to include in the mix, just haven't taken the time to do it yet.
I normally use just cured live oak, but have also tossed in pecan to have a smoother flavor ... peach actually puts a bit of a sweet taste into the smoke which is also very good.

Take that smoked sea salt and put it on the rims of the glasses when you make Margaritas.
It. Is. GOOD.

Looks like good weather for smoking some cheese this weekend. Saturday's temps and cloudy conditions would be about perfect. I can get my little fire going when the sun comes up and have it done by early afternoon. I have some extra sharp cheddar and some medium cheddar, might pick up some baby swiss to throw on also. Pecan and oak wood for smoke. ![[Linked Image]](https://texashuntingforum.com/forum/pics/userpics/2021/01/full-61217-278016-laramie_forecast.jpg)

Never thought about smoking seasonings before. Curious as to the difference it makes on the rub? Do you still use a binder?

I have a gas grill so the smoked salt and other spices give a wood fired grill flavor to the meat. Not the same as cooking over wood coals but close.

I use smoked seasoning all the time from Bourbon barrel Foods. I used the smoked sugar in an apricot chutney I serve with mac and cheese egg rolls, my wife's daiquiris, and a few other things. I'm a huge fan of the bourbon barrel aged Worcestershire and soy sauce. The smoked paprika, chili powder, and coffee rub is awesome as well. I love this company. I've never tried it myself, but I guess I need to. Looks awesome. ![[Linked Image]](https://texashuntingforum.com/forum/pics/userpics/2021/01/full-64646-278077-seasoning.jpg)
